سفرة كويك – كشري | KUSHARI – Sofra Quick

Ingredients:

3 onions
1/2 cup hummus
1 cup brown lentils
2 spoons butter
1 cup vermicelli
(shaareyya)
1 cup rice
1 cup small pasta
1 jar tomato sauce
3 cloves garlic
olive oil
salt and pepper
cumin
vinegar
Al-dakka:
8 cloves garlic, crushed
1 cup water
1/2 cup vinegar
1/2 tsp cumin
1/2 tsp chili powder
Salt
Al-Shatta sauce:
6 cloves minced garlic
2 tablespoons white vinegar
1 jar tomato paste
2 teaspoons cumin
6-8 Chili red peppers
2 tablespoon olive oil
Method:

Fry onions in oil until crisp. Set aside
Cook lentils in water and salt. Set aside
Fry and cook vermicelli, then add rice, and set aside.
Cook pasta, and set aside.
Prepare the sauce by sauteing garlic, then adding the tomato sauce, olive oil, salt, pepper, cumin, and vinegar. Set aside.
Prepare the dakka: add all ingredients into a transparent jar, and stir or shake until incorporated.
Prepare the shatta: In a blender, puree all ingredients. Cook in a skillet until mixture boils. Lower heat, Simmer until cooked.
To serve Kushari:
Add layer of rice and vermicelli
Add layer of pasta
Add layer of lentils
Add layer of hummus
Top with sauce
Sprinkle fried onions on top
Drizzle with dakka
Serve.
